Here is a wonderful, protein rich smoothie to start your day. Sprouted buckwheat is gluten free and rich in minerals and also easy to digest. The fresh lemon is great for helping your liver to release toxins and the strawberries provide lots of vitamin C and fibre. Making your own almond milk is really easy as well and much fresher and nutritious than buying it in the store. The leftover pulp can be used in another recipe or disposed of.
  • ½ cup raw, almonds, soaked overnight, drained and rinsed
  • 2 cups filtered water
  • 1 cup raw, organic buckwheat groats, soaked overnight, drained and rinsed
  • 1 tsp raw honey
  • 1 inch fresh ginger, peeled
  • ¼ tsp vanilla powder
  • 1 cup fresh strawberries
  • 1 lemon with just the outer zest removed, quartered
  • 1 tbsp hemp seeds
  1. Using a high powered blender, combine the soaked almonds and 2 cups water and blend until smooth. Strain though a nut strainer or fine meshed sieve.
  2. Combine the almond milk with the remaining ingredients in the blender and blend on high until completely smooth.
  3. This can all be consumed as one serving, or shared if you are feeling generous...
