Summer is almost here and our local strawberries and sweet peas are ready! I am always an advocate for shopping for fresh, local ingredients and our Farmer's Markets are up and running.
  • For the Salad:
  • 1 cup strawberries, washed and sliced
  • ¼ cup hemp hearts
  • 2 cups cucumber, diced
  • 2 scallions, sliced
  • ¾ cup fresh sweet peas, removed from pod
  • 2 radishes, thinly sliced
  • fresh basil or mint
  • 4 cups fresh lettuce of your choice, washed and torn into bite sized pieces
  • For the Dressing:
  • 1 cup strawberries
  • ¼ cup apple cider vinegar or lime juice
  • 3 tbsp extra virgin olive oil
  • sea salt and pepper to taste
  1. For the Salad:
  2. Prepare all salad ingredients except lettuce and toss gently in a large bowl.
  3. In a serving bowl, place 2 cups fresh lettuce and top with salad ingredients.
  4. Drizzle on dressing.
  5. For the Dressing:
  6. Combine all ingredients in a food processor and blend until smooth.
  7. **Dressing will keep in the fridge for 2 weeks.
