This is a wonderful side dish with chicken or turkey in the fall. It is also nice as a stuffing in roasted acorn squash. Yum-yum! Whole grains like wild rice and quinoa are nutrient-dense and good sources of fibre. They also have a wonderful, chewy texture and lovely, nutty flavour.
  • ½ cup dry quinoa
  • ½ cup dry wild rice
  • 2 tbsp red onion, minced
  • ¼ cup celery, small dice
  • ½ cup carrot, small dice
  • ¼ apple, small dice
  • 1 tbsp thyme
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  1. Rinse the quinoa well under cold, running water.
  2. Cook in 2 parts boiling water for 12 minutes, drain and set aside.
  3. Cook wild rice in 4 parts boiling water for 45 minutes, drain and set aside.
  4. Lightly sweat the onion, celery, carrot and thyme in a pan with 1 tsp olive oil for 5 minutes.
  5. Add quinoa, wild rice, apple, lemon juice and remaining olive oil, mix to combine and heat through.
