This is a simple, nutritious and delicious summer salad that you could add to any meal. Both quinoa and black beans are high in protein and complex carbohydrates. Did you know that beans have the ability to stabilize your blood sugar not only at the meal you eat them, but also at the following meal?
  • ⅓ cup dry quinoa
  • ¼ cup organic apple cider vinegar
  • ¼ tsp ground cumin
  • ¼ tsp ground coriander
  • ¼ cup cold pressed extra virgin olive oil
  • 1 clove minced garlic
  • pinch sea salt and black pepper
  • 1 tbsp chopped cilantro
  • 2 tbsp scallions, thinly sliced
  • 1 can black beans, drained and rinsed well
  • 1 cup cherry tomatoes, halved
  • 1 red pepper, diced
  1. Rinse the quinoa under cold running water. Drain well.
  2. Cook the quinoa according to the package instructions. Drain and set aside.
  3. Mix the dressing in a small dish by combining the apple cider vinegar, cumin, coriander, garlic. sea salt, pepper and olive oil. Whisk well.
  4. In a large bowl, combine the scallions, black beans, red peppers, cherry tomatoes, quinoa, and cilantro. Toss with the dressing and season to taste.
