Pineapple Guacamole with Pico de Gallo

During the summer months I always have the ingredients for this quick and simple snack on hand. If we have surprise guests coming over or if I am rushed for time, this is my go-to dish. I know that it never gets boring and it is always well received at any bbq or pot luck dinner.
  • For the Guacamole:
  • 1 ripe avocado
  • 1 small clove minced garlic
  • 1 tbsp minced red onion
  • juice of ½ lime
  • pinch of sea salt
  • ¼ inch ring pineapple
  • 2 tbsp chopped cilantro
  • pinch smoked paprika
  • For the Pico de Gallo:
  • 1 beefsteak tomato, diced
  • ½ small red onion, finely diced
  • 1 finely chopped jalapeno pepper
  • juice of ½ lime
  • handful of cilantro, finely chopped
  • pinch coarse sea salt
  1. For the Guacamole: Mash the avocado in a small bowl until smooth.
  2. Peel and core the ¼ inch ring of pineapple. Chop it finely.
  3. Gently stir the pineapple and remaining ingredients into the mashed avocado and taste for seasoning.
  4. For the Pico de Gallo: When all the ingredients are prepped, combine in a small serving dish and stir to combine.
  5. Season with a pinch of coarse sea salt.
