Herbed Quinoa Salad with Green Beans and Sweet Corn

Quinoa is one super grain! It has the highest protein content of any grain. Actually, it is technically a seed. It is rich in essential fats, vitamins and minerals. It is particularly high in calcium, iron, B vitamins and vitamin E and it's protein is of better quality than many meats!
  • ½ cup quinoa
  • ½ cup red quinoa
  • kosher salt
  • 3 cups water
  • 2 ears fresh corn, shucked
  • 8 oz green beans, trimmed and cut into 1 inch pieces
  • 1 cup cherry tomatoes, halved
  • ¼ cup extra virgin olive oil
  • ¼ cup pumpkin seeds, toasted
  • 2 tbsp fresh lemon juice
  • ½ cup fresh parsley, chopped
  • 2 tbsp fresh chives, snipped
  1. Bring the water and salt to a boil and stir in quinoa. Cook for 12-15 minutes until the hulls begin to separate. Drain and set aside.
  2. Bring another pot of water to a boil and add the corn and green beans. Cook for 2 minutes and drain.
  3. Combine the corn, beans and quinoa in a large bowl and add the olive oil.
  4. Stir in the remaining ingredients and chill 1 hour before serving.
