Grilled Striploin with Sweet Potatoes and Asparagus

I really love summertime because it allows me to cook outdoors at my barbecue! I love BBQ-ing because all meals come together without pots and pans to clean afterward. I try to plan the meal so that everything can either cook on the grill or if I have a side salad, it can be prepared ahead of time. Grilling can be a really healthy way of cooking, but do remember to control your heat to prevent scorching. Blackened foods from grilling contain carcinogens that are toxic to our bodies. Stay close to your grill and keep a close watch and you will have a healthy, delicious meal.
  • 2, 4 oz striploin steaks about 1 inch thick
  • 2 cloves garlic, minced
  • pinch of crushed chiles
  • ¼ cup extra virgin olive oil
  • sea salt, black pepper
  • 2 sweet potatoes, washed and cut into rounds
  • 1 bunch asparagus, tough stems removed
  • extra virgin olive oil, sea salt and pepper
  1. Beginning about at least 2 hours, but not more than 12 hours before you want to start cooking, marinate the steaks by rubbing them with the garlic, olive oil and crushed chiles.
  2. Place in a glass container with a tight fitting lid and chill until ready to use.
  3. When you are ready to begin cooking, heat up your grill.
  4. Remove the steaks from the fridge while you prep your vegetables.
  5. When you veggies are ready, drizzle them with a little olive oil and sprinkle with sea salt and pepper.
  6. When grill has been properly heated, clean it well with a wire brush and reduce the heat to medium- low.
  7. Lay out your sweet potatoes in a single layer. They will take about 30 minutes to cook through.
  8. After your potatoes have been cooking for 15 minutes, season your steak with salt and pepper and lay on the hottest side of the grill. For medium doneness, cook for 6 minutes on the first side, flip over and cook another 6-8 minutes.
  9. Your asparagus will cook the fastest. It only need about 3-5 minutes depending on how thick the stalks are. Lay them out on the grill across the grate so they don't fall through. After 2 minutes, gently roll the asparagus to the opposite side and finish cooking.
  10. Remove everything from the grill and serve!
