Grilled Shrimp with Seafood Salsa

This is a simple dish to whip up when you are hosting a BBQ or just feel like a healthy appetizer. I like to cook them on the grill, but you could easily roast them in the oven at 400 for about 5-7 minutes. The salsa is my version of a great seafood dip that dodges sugary ketchup and replaces it with a healthy alternative. Ingredients
  • 1 lb shrimp medium to large sized, sourced from US or Canada preferably
  • 2-3 tbsp extra virgin olive oil
  • 3 cloves minced garlic
  • 1 pinch crushed chiles
  • good pinch of sea salt
  • ¼ cup good quality salsa
  • 1 tbsp grated horseradish (you could use prepared. I like Bubbie's brand)
  • juice from ½ lemon
  • 2 tbsp minced red onion
Instructions
  1. Peel the shrimp, but leave the tails on.
  2. Toss with the olive oil, garlic, chiles and sea salt. Allow the shrimp to rest in the marinade while you heat up your grill.
  3. Meanwhile, prepare the seafood salsa by combining the salsa, horseradish, lemon juice and onion. Stir to combine and pour into a small serving bowl for dipping.
  4. Now BBQ your shrimp over medium heat, turning once until cooked through. This will probably take about 5-6 minutes.
  5. Serve with the Seafood Salsa and enjoy.
