Spring is the time to get back into eating fresh, raw foods! After a long, cold winter when we want to eat hot, comforting meals it is great to refresh the body and cleanse your tissues with fresh fruits, vegetables and herbs. This is the time when I really crave fresh foods and it is a sign that the body is ready to release some of the buildup of winter. This salad is crunchy and delicious with a fresh herb dressing that is rich in minerals and vitamin C that help to cleanse the body, reduce inflammation and give your skin a healthy glow!
1 red bell pepper, sliced into 1 inch strips
2 medium carrots, sliced thinly on the diagonal
½ lb sugar snap peas, trimmed and stringed
4 scallions, thinly sliced
1 jalapeno, minced
1 clove garlic, minced
1 tsp grated ginger
2 tbsp lime juice
1 tsp cider vinegar
1 tsp raw honey
¼ cup extra virgin olive oil
½ cup each parsley, cilantro, basil and mint, finely chopped
Prepare all vegetables and place in a large glass bowl.
Combine jalapeno, garlic, ginger, lime juice, cider vinegar and honey, and whisk while slowly adding olive oil.
Pour dressing over vegetables and toss to combine.
Add chopped herbs and toss lightly.
Serve with chicken, fish or enjoy on it's own.
