This side dish is not only tasty, but really versatile. Use it in place of a bun with a turkey burger, serve with eggs and skip the toast. It also pairs nicely with whole grains like quinoa and brown rice. Coconut oil is a perfect cooking oil as it has a very high smoke point which protects your cooking food from free radicals which can occur during cooking.
  • 2 tsp coconut oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can of black beans, rinsed well under cold running water
  • 1 red pepper, diced
  • ½ pint cherry tomatoes, halved
  • 1 small zucchini, diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp chile powder or chopped chipotles
  • 1 tbsp finely chopped parsley
  • 1 tbsp finely chopped cilantro
  • ½ tsp sea salt
  1. In a large saute pan, heat the coconut oil over medium low heat. Add the onions and garlic and cook for 5 minutes until softened and traslucent.
  2. Add cumin, coriander and chile powder and cook 2 minutes, stirring until spices become very fragrant.
  3. Add the red pepper, black beans and zucchini. Continue to cook for 5 more minutes, stirring.
  4. Stir in the cherry tomatoes and herbs and toss to combine.
  5. Season with sea salt.
