I just love this salad! The combination of earthy beets and creamy avocado works so well together to create a delicious, filling salad that is light enough that you don't fall asleep after your ,meal!
  • For the Salad:
  • 4 beets, roasted, peeled and quartered
  • 1 avocado, diced
  • 2 tbsp raw pumpkin seeds
  • ¼ cup fresh cilantro (optional)
  • 4 cups arugula
  • ¼ red onion, thinly sliced
  • For the Dressing:
  • 1 shallot, minced
  • 1 tbsp Dijon mustard
  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • sea salt and pepper to taste
  1. Combine all the dressing ingredients in a 1 cup mason jar and shake well.
  2. Toss the beets with the avocado, pumpkin seeds, red onion and cilantro.
  3. Add some of the dressing and toss to coat.
  4. Heap 1 cup of arugula on each plate and drizzle a little dressing over the top.
  5. Top with the beets mixture and enjoy
