Banana Nut Biscuits

These biscuits are a great snack to eat after a strenuous workout. Healthy fats, protein and carbohydrate in a balance to help replenish glycogen stores and keep your energy high.
  • 2 cups unsalted, raw cashews
  • ¼ tsp sea salt
  • 2 ripe bananas
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ½ cup walnuts
  • 1 tbsp flax seeds
  • ¼ cup raisins (optional)
  1. Combine the cashews and sea salt in a food processor and blend into small pieces.
  2. Break up the bananas and add these along with the vanilla and cinnamon to the food processor. Mix until well combined.
  3. Add the walnuts, flax seeds and optional raisins and pulse to evenly distribute.
  4. Scoop into 2 tbsp balls and place on a parchment lined baking tray. Flatten slightly with the back of a spoon.
  5. Bake in your oven on it's lowest setting for about 2-4 hours. Checking until they are dry, but still soft and chewy. Continue checking until desired doneness is reached.
  6. Store in an airtight container in your fridge for up to 2 weeks.
