There are a lot of versions of the Acai Bowl. Basically it is frozen acai puree combined in a blender with a few other ingredients until smooth and topped with fruit and granola. Acai is a fruit from South America that we only get in frozen puree form. You can find acai in the freezer section of a health food store where the frozen fruit is. It is delicious and 10 times higher in antioxidants than red grapes. It has the highest antioxidant rating of any fruit, in fact and it is naturally low in sugar. By adding in the nut butter, kefir, chia seeds, granola and coconut, you are getting essential fats and protein which make this a complete breakfast that will fill you up and keep you satisfied.
  • 1 pkg acai puree, frozen
  • 1 date
  • 1 tbsp nut butter
  • 2 tbsp kefir
  • 1 banana
  • 1 tsp chia seeds
  • 1 tbsp goji berries
  • 2 tsp shredded coconut, unsulphured and unsweetened
  • 1 tbsp sprouted granola
  • ½ cup fresh berries
  1. Cut the banana in half. Put half in the blender and slice the other half.
  2. Using a high powered blender, break up the açaí puree and add the date, nut butter and kefir to the ½ banana. Blend on high until smooth.
  3. Scrape into a bowl.
  4. Top with the remaining ingredients.
