Mango and Sprouted Mung Bean Salad

This salad is so fresh and delicious and includes one of my favorite "Superfoods", sprouts! I sprout my own beans and seeds and it is so easy, anyone can have fresh sprouts available at all times. Sprouts of all kinds are very nutrient dense, helping with digestion and alkalizing your body.
  • 1 cup sprouted Mung beans
  • 1 carrot, washed, peeled and shredded
  • 1 ripe mango, peeled and diced
  • 1 Granny Smith apple, finely diced
  • ½ bell pepper, sliced into strips
  • 2 scallions, thinly sliced
  • 1 tsp minced ginger
  • ½ tsp sea salt
  • juice and zest of 2 limes
  • 1 tbsp extra virgin olive oil
  • ½ tsp black mustard seeds
  • 1 tsp raw honey
  • 1 jalapeno, minced
  • 1 tbsp fresh cilantro leaves, well washed
  1. In a large glass bowl, combine the Mung bean sprouts, carrot, mango, apple, scallions and bell pepper. Toss to combine.
  2. In a small measuring cup, whisk together the ginger, sea salt, lime zest and juice, mustard seeds, honey, olive oil and jalapeno.
  3. Drizzle the dressing over the salad and garnish with fresh cilantro.
